Palace Hotel Tokyo is replacing its long-standing Crown restaurant with Esterre by Alain Ducasse. Whereas Crown represented an entry point for French cuisine into Japan when it opened in the 1960’s, Esterre will debut Ducasse’s philosophy of “naturalness” cuisine when it’s unveiled in November. Launched at the iconic three-Michelin-starred Hotel Plaza Athénée in Paris, the “naturalness” concept revolves around sustainably sourced cereals, vegetables and fish, producing dishes such as “volcanic hill green lentils and caviar with flavoured delicate jelly”. Of course, the use of seasonal, Japanese ingredients will serve up “naturalness” idiosyncratic to its locale.
