Palace Hotel Tokyo is replacing its longstanding Crown restaurant with Esterre from Alain Ducasse. Whereas Crown represented an entry point for French cuisine into Japan when it opened in the 60’s, Esterre will debut Ducasse’s “philosophy of naturalness cuisine” when it’s unveiled in November. Launched at the iconic three-Michelin-starred Hotel Plaza Athénée in Paris, the naturalness concept revolves around sustainably sourced cereals, vegetables and fish, producing dishes such as “volcanic hill green lentils and caviar with flavoured delicate jelly”. Of course, the use of seasonal, Japanese ingredients will serve up naturalness idiosyncratic to its locale.
