Good news for fans of SoCal’s growing fine dining scene: Chef Dave Beran of the celebrated Dialogue is opening a second restaurant in the autumn. Named Pasjoli, it’ll be the James Beard Best Chef winner’s interpretation of a modern French bistro, with a robust wine programme and French-inspired cocktails. For all that contemporaneity, Beran is determined to recreate the verve of the Escoffier era – think caviar service and a tableside duck press. The menu will be drawn from the classics while naturally reflecting Southern California’s vast natural larder.
