Chef Ken Tominaga is the latest big name landing amid the Nashville culinary boom, bringing his PABU concept to street level at the JW Marriott hotel in Downtown. Fish will be flown in from Japan to supply the modern izakaya and sushi bar. There will also be a happy hour featuring a signature Japanese whisky programme, premium and super premium sakes, and a curated assortment of Japanese beers. Rooting this third PABU in its locale will be décor featuring a homage to 60’s Japanese pop bands – a playful wink to Nashville’s musical heritage.
