Spinning definition-defying magic is something Head Chef James Lowe is very familiar with, not only securing a Michelin star for his first restaurant, Lyle’s – with its distinctly low-key approach to fine dining – but also a place on The World’s Best 50 Restaurants list. His second endeavour, Flor, is somewhere between a wine bar, a bakery and a restaurant, inspired by the buvettes of Paris and the pintxos bars of San Sebastián. Spread across two floors of a nineteenth-century building at the edge of Borough Market, Flor is somewhat of a little sister to Lyle’s, serving simple dishes drawing on Borough Market’s vibrant and varied produce. Raw scallop with preserved gooseberry and green tomato or white asparagus with honey and walnuts make for a fine lunch. But the Saturday brunch, where you can enjoy coddled egg with trout roe and za’atar alongside a glass of agriculturally-responsible pinot, is when Flor really comes into its own.
