One of the world’s brightest architectural outfits, Snøhetta are the masterminds behind Europe’s first underwater restaurant. Resembling a monolithic concrete periscope, Under will also feature a huge viewing window and its own marine lab. A destination restaurant this dramatic needs a menu to match. Head Chef Nicolai Ellitsgaard highlights the importance of ‘short-travelled’ food to ensure optimum freshness.
